Hill Street Char Kway Teow - Still the Best!

Ahhh. Just as I was about to take many loving shots of my delicious looking plate of char kway teow, my camera battery died on me, allowing only enough juice for a few pictures. Aaww, that just means I have to come back another day to do photo justice to the dish! Yay! I love this stall and would return in a heartbeat any day.

However, today I didn't see the famous old uncle who stir-fries the kway teow with gusto and aplomb. It was a lady doing the cooking, but she too, did not display any less vigour in preparing the dish. It came out decent enough but somehow in my biased mind, I still think the old uncle does a better job.

So why is this dish superior here? First of all, I love that this char kway teow has great wok hei (breath of wok, i.e. the 'essence' and tastes generated from stir-frying on a really hot wok). You can literally feel your insides warming up as the kway teow descends into your stomach. Secondly, pork crackling or fried pork lard is used generously, lending extra flavour and crouton-like crunch to the dish. They are fried just the way I like them - really crisp. Thirdly, good Chinese sausage and lots of beansprouts and chives round up a really well-seasoned and garlicky dish. The vegetables help to cut through the grease a little.

It deserves a "wow factor" label! One of the very FEW Makansutra legends that deserve its title.
