HK2: FINDS Scandinavian Restaurant at The Luxe Manor
FINDS Restaurant and Bar at The Luxe Manor is one of Asia's few Scandinavian restaurants (it's the only one in the Pearl River delta). FINDS stands for Finland, Iceland, Norway, Denmark, Sweden but has also come to mean Food, Ideas, Nightlife, Drinks & Service that's friendly. That's a lot of stuff crammed into one acronym, but suffice to say, FINDS is a nice find.
For one, the contemporary Nordic decor is really cool. Icy blues, fresh greens, pine panels, bronze chain mail curtains and flowing curves successfully make a cosy space very chic. There is a bar on one side, with plush seating hidden from view near the wine cellar. The other side is seating for the restaurant. The bar is known for its exciting “Molecular Mixology” cocktails.
Executive chef Jaakko Sorsa is from Helsinki, where he helped build the success of two-Michelin star restaurant Chez Dominique. He takes inspiration from the five Nordic countries and pairs it with Asian sensibilities. Some of it can look slightly fusion, but it works.
The Hong Kong Tourism Board arranged for us to meet with the PR folks of The Luxe Manor where we were staying, and we had lunch at FINDS after a tour of their very gorgeous uniquely themed suites (more on that in a separate post).
Lunchtime at FINDS can be a nice healthy experience. There is a salad buffet you can enjoy as part of a semi-buffet set meal from only HK$98 (salad and soup) to HK$168 (salad, soup, main course, dessert, coffee/tea).
This really can be a meal in itself. Mixed salad greens; potato salad; pear, walnut and feta cheese salad; chili squid salad; grilled vegetables; and pomelo and mango salad with mint yoghurt,
Water flavoured with cucumber? It's very refreshing!
We had some mains after the salad.
The "Veal Wallenberger" with Yukon mash, French beans, green peas, crushed lingonberries and red wine sauce. Crispy on the outside, juicy on the inside!
Signature House-smoked Salmon with stewed morels, fingerling potatoes and dark dill sauce. The salmon was quite delicate, certainly not overdone.
Pan-fried Greenling Fillet with savoy cabbage, leek and fennel roast potato, tarragon hollandaise. I didn't get to taste this but it looked and smelt really good.
Home-made Bread Pudding with vanilla and chocolate sauce. We were quite full at this juncture, what with the soup, salad and lovely mains. Don't miss the very excellent coffee at the end.

Great FIND! Everything had Scandinavian influence except perhaps bread pudding.
