Valentine's Day Chef's Menu at SEAR
It's February and for many, it's the month of love. Yes, Valentine's Day is coming. If you're looking for a place to impress your date, SEAR is one of the best romantic restaurants to bet on.
For starters, it's perched loftily on the 45th floor of the Singapore Land Tower with awesome city skyline views.
And it has awesome steak. Men don't want flowers or candy. They want steak.
For Valentine's Day, executive chef Claudio Sandri and his team have crafted a pretty thoughtful menu - it's got oysters, lobster, premium beef, scallops and luxurious chocolate. The three courses showcase the kitchen's skills with the PIRA charcoal oven, which sears everything beautifully and gifts that lusciously smoky aroma. I've always liked Chef Sandri's cooking, so I'm glad to see him helming the kitchen here too.
AMUSE BOUCHE: Crispy Pork Belly
This is a pretty hefty amuse bouche, and is only available during the second seating. The crispy pork belly is a nod to our Asian roots, and is roasted well with the skin crackling but meat still juicy. It's paired with clementine sorbet (most interesting, although a tad too sweet for me) and hoi sin sauce.
For Starters, we have three choices:
Seasonal Oysters
These are Fine de Claire oysters, served with diced Iberico and a Roma tomato cloud. Beautifully sweet and creamy.
Grilled Hokkaido Scallops & Foie Gras
The scallops retain that tender medium rare centre while delighting with caramelised edges. As if that's not decadent enough, slices of foie gras
Sweet Corn Soup
This is no simple corn soup. Made from pearl corn, and garnished with PIRA grilled baby corn, this bowl of comforting goodness is a strong savoury contender. It definitely has a great stock for its base.
For the Mains, it's even harder to choose, so might be a good idea of have one of each, and share:
PIRA Grilled Canadian Tenderloin
The Canadian beef is lean yet a powerhouse of flavours. Succulently seared with a sweetly smoky aroma, this is testimony to the magic of the PIRA charcoal ovens. Homemade basil gnocchi, baby carrots, red wine sauce and a sprinkle of pine nuts complete the ensemble.
Spanish Rice Stew
This paella-like dish features chunks of Canadian lobster, iberico chorizo and stewed Roma tomatoes. I'm not usually a big fan of such rice dishes, but this one had me scooping a second helping! It's so richly flavoured, and the chorizo slices are a crispy bite of heaven.
And for Desserts, pick a sweet ending from:
Marshmallow and Double Chocolate Mud Cake
This rich dark chocolate mud cake is laced with whisky, topped with thick dark chocolate ganache and marshmallows. A dollop of vanilla bean ice cream sidles up next to it in the garden of chocolate soil and other candied treats.
Raspberry Soufflé
If you prefer something lighter, the soufflé is marvellously executed. It's soft and fluffy, and gets drizzled with milk chocolate sauce. Crispy dehydrated raspberry bits add textural contrast.
There is a gorgeous outdoor area overlooking the Marina Bay and CBD. It's really cool up here too, with the natural breeze.
Next door is Angie's Oyster Bar, where you can adjourn for 1-for-1 aperitifs all night long. Couples looking to party will enjoy complimentary entry into Empire's Valentine's Day Traffic Light Party (usual cover charge is S$25) with every Valentine's Day Chef's Menu ordered.
There are two seatings on 14 February 2015:
- The first seating at 6.00pm is priced at $108++ per person.
- The second seating at 8.30pm is priced at $138++ per person.
Wine pairing is also available for an additional $35++ per person.
